A balanced four-pulse pour over built around clarity and sweetness. Calibrated for our light-roast single origins on the Hario Neo 01.

Bleached paper filter — rinse thoroughly before brewing.

Burr setting calibrated for medium-fast drawdown on light roast.

Prep

RDT + remove chaff

Light spritz before grinding to reduce static, sift chaff after.

WDT using NCT Bloom

Stir the bed gently to break clumps and level the surface.

Dose 15.5g for a final 15g — some coffee is lost when removing chaff after grinding. We brew at 1:16, four pulses, total time around 2:20.

03 — Pour

The Pour Schedule

Four pulses, calibrated for clarity. Adjust pour speed and circle size to keep the bed even and the drawdown predictable.

  1. 01 00:00 — 00:35
    40g Total 40g

    Bloom. Medium flow rate, circle pour from center to edge.

    Saturate every grain — degas before the first pulse.

  2. 02 00:35 — 01:00
    80g Total 120g

    First pulse. Medium flow rate, steady circle pour.

  3. 03 01:00 — 01:30
    80g Total 200g

    Second pulse. Low flow rate, smaller circle.

  4. 04 01:30 — 02:20
    40g Total 240g

    Final pulse. Begin once the bed is semi-dry. Center pour, no agitation.

    Low flow, narrow target — protect the bed structure.

Finish

Stop the brew when drops slow to a 0.5-second interval. Swirl the server, pour, and serve immediately.
